Bean Salad Galore


In a bowl add the following ingredients:

- 15 oz white kidney beans
- 15 oz kidney beans
- 15 oz black olives sliced
- 15 oz green beans
- 1 cup of corn
- 4 scallions chopped
- 1/4 cup of cilantro chopped
- 1 tablespoon of dried mint
- 1 teaspoon of cayenne pepper
- 2 tablespoons of Boscoli Italian Olive Salad
- 1 lemon squeezed
- 1 tablespoon of cold pressed olive oil
- 1 teaspoon on sea salt

Mix together and serve!

Fun Version of Walnut Fudge


In the food processor add 2 cups of walnuts and grind until fine.
- Add 4-5 dates
- 2 tablespoons of honey
- 2 teaspoons of cinnamon
- 2 teaspoons of pumpkin spice
- 1 teaspoon of shredded coconut
Mix in the food processor until creamy or turns into dough like texture.
Make into balls and flatten them out. Use your fingers or round edge to indent the dough in the middle. Add shredded coconut and raw almond.
Refrigerate for at least an hour. Serve and enjoy.

Frozen Fruity Delight


My son wanted Ice Cream last night... so we came up with this... He enjoyed!!!! And so did I!!!!

In the Vitamix add the following ingredients:

- 5 Large Frozen Strawberries
- 1 Cup of Frozen Blueberries
- 1 Cup of Frozen Pineapples
- 1 Banana
- 2 Tablespoons of Flaxseeds
- 2 Tablespoons of Udo's Oil 3.6.9

Blend and serve!

You can also put it in the freezer for a little to get more to the texture of Ice Cream.

Super Delish Hot Cinnamon Apple Cider



- Juice 10 apples
- In a pot add the juice and a stick of cinnamon and let boil
- then turn to low heat for 10-15 min.

Feeling Sick? Apple Cider Vinegar

When I am feeling sick I make this:

Pour boiling water in mug and add 3 teaspoons of Braggs Apple Cider Vinegar, 1/2 lemon squeezed, and 1 teaspoon of honey.

Drink this 3 times a day and in a few days you will be on the road to feeling better!

Apple Cider Vinegar is good for so many things. Headaches, Digestion, Bad Breathe, etc. It can also be used as a topical for acne, athletes foot, shingles, etc....

Easy Stir Fry with Chow Mein


In a wok add 3 cloves of garlic - crushed and 2 tablespoons of cold pressed olive oil. Cook the garlic for a few minutes then add 1 cup of raw peanuts and 1 tablespoon of Braggs Liquid Aminos and saute.
Add the following ingredients to the wok:
- 15 oz baby whole corn
- 8 oz water chestnuts sliced
- 4 scallions chopped
- 1/4 cup of cilantro
- 3 - 5 tablespoons of Braggs Liquid Aminos
- 1/4 cup of celery chopped
- 1/4 cup of parsley chopped
- 1 cup of baby carrots
- 1 cup of broccoli
- 1 cup of snow peas
Cook until vegetables are somewhat soft, about 20 minutes
In a separate pot cook 6 oz of chow mein stir fry noodles
Add the chow mein to the wok and mix

Potato Bean Stew


Ingredients:
5 Potatoes
2 cups of garbanzo beans
1 cup of edamames
1/2 cup of black beans
3 scallions chopped
1/4 cup of cilantro chopped
2 cloves of garlic minced
1 tablespoon of sea salt
2 cups of vegetable broth
2 tomatoes diced

In a pot, boil water and add the 5 potatoes cut in half or quarters. Cook until the potatoes are somewhat soft. Drain and put potatoes aside.
In another pot or wok, add the rest of the ingredients and the potatoes. Cook until warm. About 15 minutes.
You can serve with spanish rice... YUM!!!!

Stuffed Bell Peppers


Cut the top from the Bell Pepper and scoop out the inside.
Add the following ingredients inside the bell pepper:
- 1/4 cup of green peppers finely chopped
- 1 cup of black beans
- 1.5 cup of brown rice
- 1/4 cup of scallions finely chopped
- 2 cloves of garlic crushed
- 1 tablespoon of sea salt
- 1 tablespoon of pepper
- 1/4 cup of parsley finely chopped
- 1/4 cup of tomatoes finely chopped
- 2 tablespoons of lemon
- 1/4 cup of pinenuts
- 2 teaspoons of capers
Fill the bell peppers 3/4 of the way full.
In a large pot add the following ingredients:
- 4 cups of water
- 1 can of tomato sauce
- 6 tablespoons of lemon
- 1 tablespoon of sea salt
- 2 cloves of garlic crushed
Add the stuffed bell peppers in the pot. Bring to a boil. Then turn heat to med/low and cook approx 45 min. or until the rice is soft. While the peppers are cooking, take the sauce from inside the pot and pour over stuffed peppers, several times. This will help the rice inside the peppers cook faster and absorb the great taste of the sauce.

1 cup green olives

3 tablespoons of capers

4 cloves of garlic

1/2 lime fresh squeezed

Quinoa Fun





Cook Quinoa according to package. 1 cup of Quinoa to 2 cups of water. I add a dash a sea salt to the water.


Let Quinoa cool and add the following ingredients:


1 cup of kidney beans

1/2 cup of Boscoli Italian Olive Salad (my all time favorite)

1/2 cup of sliced raw almonds

1/2 cup of sliced scallions

1/2 cup of sliced cilantro

1/8 cup of fresh lemon juice

2 tablespoons of sea salt

Burrito Fun!!!!!








One of my favorite foods are Burritos. I was having a huge craving for some Mexican food, so I decided to go the healthy way and make my own. My son, who can be a picky eater, loved putting his burrito together with the ingredients he chose.
These are the ingredients that I put out for us to fill our burritos:
Whole Wheat Tortillas
Sliced Onions
Sliced Tomatoes
Sliced Black Olives
Cilantro
Homemade Spanish Rice
Pinto Beans sauted in garlic and sea salt
Homemade Guacamole
Recipe for Guacamole:
In a bowl mix the following ingredients together-
2 Avocados - use a fork to mash the avocado
1/2 Fresh Squeezed Lemon
3 cloves of garlic - minced
1/8 cup of chopped cilantro
1 small chopped tomato
1/2 small onion - chopped
Pinch of sea salt

Light and Refreshing Garlic Ginger Soup

Organic Vegetable Broth - 64 oz
Fresh Garlic - 4 cloves - finely minced

Bring to a boil, then keep on low for approx. 30 minutes.

Ingredients:
Crust:
Almonds
Raisins
Filling:
Cashews
Honey
Blueberries
Lemon
Vanilla

Coconut Flakes
To make the Crust:
-Place the almonds in a food processor and blend until fine
-Add raisins and blend
-Pat crust down in a pie pan
To make the Filling:
-Cashews, lemon, honey, vanilla, cinnamon, pumpkin spice, coconut flakes, and water in a food processor or vitamix and blend until smooth and creamy
-Remove mixture and put in a bowl and add blueberries and stir carefully
-Pour the mixture into the pie crust
-Sprinkle coconut flakes on top of cheesecake
-Add blueberries on top of the cheesecake
-Refrigerate

Shape into patties and place in oven at 350 degrees for approx 20 min.

Planting our Garden... The beginning....








We planted cilantro, parsley, scallions, red and green peppers, radishes, and tomatoes. My son also planted some flower seeds: Zinnia and Dianthus.
What still needs to be planted are the following: Strawberry plant, chives, and basil.
We already have 2 lemon and 1 tangerine tree planted. But we still need to plant the Avocado, Apricot, and Peach trees.
Work in progress!!!!!
Can't wait to watch it all grow!!!!! Love the edible garden!!!!!
