Planting our Garden... The beginning....








We planted cilantro, parsley, scallions, red and green peppers, radishes, and tomatoes. My son also planted some flower seeds: Zinnia and Dianthus.
What still needs to be planted are the following: Strawberry plant, chives, and basil.
We already have 2 lemon and 1 tangerine tree planted. But we still need to plant the Avocado, Apricot, and Peach trees.
Work in progress!!!!!
Can't wait to watch it all grow!!!!! Love the edible garden!!!!!

POW! Pesto Pasta

In a pot cook Brown Rice Pasta according to package.

In a separate pot add the following:
Diced Tomatoes
Roasted Pine Nuts
Mung Beans
Vegetable Broth
Cilantro
Pinto Beans
Sea Salt
Pepper
Garlic

To make Pesto Sauce:
In a food processor add the following:

Pinenuts
Walnuts
Basil
Cold Pressed Organic Olive Oil
Fresh Lemon Juice
Lots of Garlic
Sea Salt
Cilantro

Mix the Pasta, Pesto Sauce, and the rest of the ingredients.

Enjoy and Serve!

WOW!!!! Quinoa Spinach Salad


In a bowl add the following ingredients:


Quinoa
Spinach
Cilantro
Scallions
Red Cabbage
White Cabbage
Pinto Beans
Kalamata Olives
Avocado


Dressing:
Cold Pressed Olive Oil
Fresh Lemon Juice
Sea Salt
Garlic
Mint


Mix together and enjoy!

Mung Bean Salad



In a bowl add the following ingredients:
Black Olives
Cilantro
Mung Beans
Red Cabbage
Cucumbers
Tomatoes
Scallions
Green Peppers
The Dressing:
Cold Pressed Olive Oil
Fresh Squeezed Lemon
Garlic
Sea Salt
Dried Mint
Cayenne Pepper
Mix the Dressing onto the salad and serve! Enjoy!!!!

Bulgur, Pinto Beans and Steamed Vegetables

To Cook Bulgur:

In a pot add 2 cups of vegetable broth, sea salt, pepper, toasted pine nuts, and 4 tablespoons of Earth's Balance Organic Buttery Spread and bring to a boil. Then add 1 cup of Bulgur #4 and bring to a boil. Turn to low heat and cook until liquid is absorbed.

To Cook Pinto Beans:

In a pot of boiling water, add sea salt and raw pinto beans. Bring to a boil. Lower heat and cook until the beans are soft.

Steam Vegetables

Serve and Enjoy!!!!

Growing Food - just the beginning


Can't wait to start gardening! I plan on starting my garden this month! I will definitely keep you posted. But in the meantime I have started on scallions and basil inside my house. Look how they are growing!!!!
