Super Yummy Quinoa Salad


Cook Quinoa according to package. I use Vegetable broth instead of water.
In a bowl add the following:
Cooked Quinoa
Pinenuts (browned in oven or toaster oven)
Black beans
Cilantro
Scallions
Mint
Kidney Beans
Fresh Squeezed Lemon
Olive Oil
Sea Salt
Pepper
Mix and Serve

Greens, Greens and More Greens

Our yummy lunch! I also made some AWESOME hummus to go with it. It definitely had a ZING to it!!!! I added some fresh garlic, well..... maybe a wee too much... But it sure is Yummy!!!!

Chili and Peas


To make Chili and Peas:

In a pot add the following:

Chili Beans
Sliced Fresh Garlic
Onions
Cilantro
Sea Salt
Pepper
Peas

Cook until warm and serve!

Lentil Brown Rice and Veggie Patties


In Rice Cooker add the following:

Vegetable Broth
Brown Rice
Lentils
Tomatoes
Sea Salt
Pepper
Garlic
Cilantro

Cook according to Rice Cooker.


Veggie Patties:
Garbanzo Beans
Kidney Beans
Sunflower Seeds
Tahini
Cilantro
Scallions
Sea Salt
Pepper
Fresh Garlic
Blend in Vitamix until smooth

Shape into patties and place in oven at 350 degrees for approx 20 min.

Eat with Rice or enjoy with small whole wheat pita bread (like my son did in the picture above...)

Flax Seeds

Water
