Lentil Salad


In a bowl combine the following ingredients:
Cooked Lentils
Toasted Pine Nuts
Scallions
Black Olives
Garbanzo Beans
Black Beans
Red Pepper
Cilantro
Sea Salt
Pepper
Fresh Lemon
Capers
Green Olives
Carrots
Dill
Dried or Fresh Mint
Cold Pressed Olive Oil
Mix. Refrigerate and serve.
(This recipe was given to me by my Sweet Sister in Law--- I added a few extra things. She makes a great Lentil Salad!!! Thanks sweetie!!!!)

Fasoulia - with Lentils


In a pot add the following:
Cooked Lentils
Onions
Garlic
Organic Diced Tomatoes
Cilantro
Sea Salt
Pepper
Vegetable Broth
Organic String Beans
Cook the lentils, onions and garlic first for 5 minutes....
Then add the rest of the ingredients and cook until string beans are soft, but not too soft.

Tilapia


Place Tilapia in baking pan and add the following:
Fresh Squeezed Lemon
Cold Pressed Olive Oil
Cilantro
Scallions
Sea Salt
Pepper
Garlic
Capers
Toasted Pine Nuts
Cover with Aluminum Foil and cook in the oven at 400 degrees for 25 minutes. Take Foil off and then cook for another 5-10 minutes.

Whole Wheat Pasta - Yum Yum Dish...


Cook Package of Whole Wheat Pasta according to package.
In a separate pot add the following ingredients:
Organic Diced Tomatoes
Black Beans
Garlic
Cilantro
Scallions
Sea Salt
Pepper
Capers
Cook until heated... about 10-15 minutes
Once pasta is done, mix pasta with ingredients and serve. Enjoy!

Eggplant and Couscous Creation



Cook Couscous according to box... instead of water I use vegetable broth. Add toasted Pine Nuts to Couscous when done cooking....

Eggplant Creation:

3 small Eggplants cut into small slices
Organic Diced Tomatoes
Organic Black Beans
Cilantro
Sea Salt
Pepper
Fresh Organic Garlic -3 cloves
Onion
Vegetable Broth

In a separate pot add vegetable broth, garlic, onions and eggplant. Cook for a few minutes.
Then add the rest of the ingredients and cook until the eggplant gets soft. About 30 minutes.

Serve with the couscous...

My Sons All Time Favorite Breakfast!!!!


On Wheat English Muffin spread Earth Balance Organic Buttery Spread, Sprinkle Sugar in the Raw, and Cinnamon.


Place in oven or toaster oven until warm.


Serve and enjoy!!!!

Quick Meal - Quinoa and Pinto Beans


Heat Pinto Beans in a pot. Add Cold Pressed Olive Oil, sea salt and pepper.


In another pot cook Quinoa according to package. Instead of water, I add Vegetable broth.


Very Easy meal and tastes great!!!!
