Cook Quinoa according to package. I use Vegetable broth instead of water.
In a bowl add the following:
Cooked Quinoa
Pinenuts (browned in oven or toaster oven)
Black beans
Cilantro
Scallions
Mint
Kidney Beans
Fresh Squeezed Lemon
Olive Oil
Sea Salt
Pepper
Mix and Serve
